What nameserver should I use?

Let's say that I have site.com website that I bought at one place, but want to host on another place. I don't know what to do. Here is scenario.

I bought site.com on company that is using their own nameservers - ns.a.com. And linked website to their own servers.
I bought hosting on another company that is using nameservers - ns.b.com.

Should I just change ns.a.com on my DOMAIN to ns.b.com? Or should I link all DNS entries on my domain control panel to host ip addresses?
