IIS SMTP configuration gets reset?

A few months ago I configured our recently acquired Windows Server 2008 server. I set up the IIS SMTP, everything was working great.

However, a few days back the IIS SMTP server just lost it's configuration (I used the default SMTP server, and changed it's settings).

How can this possibly happen?
